Early Summer Garden Greens

It was a beautiful day to be outdoors, water the plants and check on our little raised garden bed. The seeds were planted during the early Spring season and lovely to see that the radish were the first to peek up and show itself to the sunshine today.

Radishes are low in calories, nutrient-dense, rich in antioxidants and contain many vitamins and minerals like B6, Magnesium, Potassium, Calcium and Zinc. So abundant in Vitamin C, which can help build immunity and fight free radicals damage from the environmental toxins we are exposed to daily.

Their leafy greens are are delicious too. Very similar in taste to Chard, Kale and Collards. Apparently, the leaves contain a high amount of essential nutrients than the radishes itself! They are so versatile mixed in a salad, stir-fry, used as a garnish on soups with a squeeze of lemon and several creative ways you can think of to enjoy this superfood.

Almost all green leafy veggies carry a basket full of nutrients and the radish ranks high on the list. A great food to incorporate into your diet helping nourish your mind, body, spirit and raise your chi.
