Simple Avocado on Toast

Avocados - This versatile fruit provides a substantial amount of healthy monounsaturated fatty acids (MUFA). They are packed with good fats and
fiber - which help you maintain feeling full longer. Avocados are a naturally nutrient-dense food and contain several vitamins and minerals. They are rich in nutrients including;

  • Magnesium
  • Potassium
  • Folate
  • Vitamin C, K and E
  • Niacin (Vitamin B3)
  • Pyridoxine (Vitamin B6)
  • Pantothenic Acid (Vitamin B5)

Here is one of my favourite simple and quick recipes using this most versatile and nourishing fruit.

Smashed Avocado on Toast

Toast a gluten free bread of your choice. I use The Little Northern Bakehouse. Spread some butter or olive oil on the toast so it is not too dry.

Any juicy and plump avocado will do. It doe not have to be organic. Slit the avocado into half and use a spoon remove and discard the pit. Chop and put in a medium bowl then drizzle some fresh lemon juice over it. Mash the avocadoes using a fork or a potato masher. Add in a tiny garlic clove and a pinch of sea salt. Mash some more and stir it all well and your guacamole is ready to be spread on the toast.

I have used freshly sprouted rainbow microgreens as a topping to make it a little more nutrient dense with some visual appeal - Which always helps! Hope you enjoy your unique version of Avocado on toast and share it with your friends and family.
